Ingredients
- 1 teaspoon lemon peel
- 1 Tablespoon fresh lemon juice
- 2 Tablespoons honey
- 4 teaspoon mild chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon ground red peppercorns
- 1 6 oz can thawed orange juice concentrate
Directions
Combine all above into a small saucepan. Bring to a boil, lower heat and cook for 10 minutes or until reduced to 1/2 a cup

Ingredients
- 2-3 tablespoons of North Carolina BBQ Rub
- 1/2 cup cider vinegar
- 1/2 cup water
- 1 cup tomato sauce
Description
- BBQ sauce that will serve 2-3 slabs of ribs or 1 pork shoulder
- Directions
- Put all ingredients in a small pot and mix well.
- Simmer on a low flame for 20 minutes, stirring occasionally.
Pepper Vinegar

Ingredients
- hot chili peppers, such as Thai chilis, Serrano chilis and others
- 1 cup distilled vinegar
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/8 teaspoon ascorbic acid (such as Fruit Fresh)
Description
Spicy vinegar, perfect to season greens, green beans and soups
Directions
Pack chili’s into glass jar or bottle. Dissolve salt and sugar into the vinegar, with cream of tartar. Pour vinegar mixture over chilis. Wait a week and taste. Can top up bottle with vinegar as you use it.
Quick Tomato Sauce

Ingredients
- 2 tablespoons olive oil
- 1-2 cloves garlic, finely chopped
- 1/2 cup onion, finely chopped
- 1-2 teaspoons Italian Seasoning blend, according to taste
- 1 bay leaf
- 1 28 ounce can crushed tomatoes
- Salt and freshly ground black pepper to taste
Optional: cooked, crumbled ground beef or Italian sausage, simmered in sauce for 30 minutes
Description
A quick and versatile tomato sauce.
Directions
- Heat olive oil in medium sauce pan, and add onions and garlic.
- Sauté until softened, about 5-6 minutes, then add tomatoes, bay leaf, and Italian Seasoning blend.
- Bring to a simmer, and cook at a simmer for 30 minutes, stirring from time to time.
Add salt and pepper to taste.
